Garlic Thyme Roast Chicken

While I eat mostly vegetarian these days, I do enjoy a chicken or turkey dish from time to time. However, the traditional roasted chicken or turkey is filled with gluten-filled breaded stuffing. Since I eat gluten-free, I decided to fill my chicken with some delicious herbs instead, making it a little kinder to my body, but still exploding with flavour!

I’ve used garlic and thyme to give this chicken a delicious taste but without that bread-based stuffing. Thyme not only gives this chicken a great flavour, but also has some handy health benefits, including:

·      Helps with relieving sore throats

·      Helps with relieving laryngitis and tonsillitis

·      Help relieve coughs

·      Used as a digestive aid

Next time you want to make a delicious roast chicken or turkey, try switching out that breaded stuffing for some beneficial herbs. You’ll get to enjoy a bird bursting with flavour and with some added health benefits to boot!

Garlic Thyme Roast Chicken

Yields: 1 roast chicken, 4 servings

Prep time: 15 minutes

Cook time: 1 hour, 30 minutes 

Ingredients:

1 (2.5 to 3 pounds) whole chicken

½ teaspoon sea salt

2 teaspoons dried thyme

1 bulb of garlic, peel removed

1 small onion, diced

water

Directions:

1.     Preheat oven to 425 degrees.

2.     Rinse chicken under cold water and place in roaster.

3.     Sprinkle half the salt and thyme inside the chicken and half on the top of the chicken.

4.     Place half the onion inside the along with the full bulb of garlic.

5.     Place the remainder of the onion in the bottom of the roaster around the chicken.

6.     Pour water into the roaster until there is about an inch of water from the bottom.

7.     Place the chicken in the oven for 1 hour and 15 minutes, basing halfway through.

8.     After the 1 hour and 15 minutes, remove lid from roaster and base one last time and bake uncovered for another 15 minutes.

9.     Remove from oven and place on platter dish to serve.
