Blueberry Chocolate Crunch
I’m a big lover of blueberry-flavoured chocolate. The combination is so satisfying to the taste buds! But when you pair it with a little crunchy texture, it becomes an even more super satisfying treat!

Antioxidants are found in certain nutrients, such as vitamins and minerals. They help to neutralize the free radical activity that is happening in our bodies. Free radical activity is happening all the time and can be caused by stress, constipation, smoking, and consumption of harmful foods such as additives and rancid fats. The key is to balance out this free radical activity by taking in antioxidants. If our bodies become overwhelmed with free radicals, health issues start to set in.

Here’s the recipe:
Blueberry Chocolate Crunch
Yields: 12 servings
Prep time: 15 minutes
Ingredients:
½ cup cacao powder
¼ cup cacao butter
¼ cup coconut oil
2 tablespoons honey
1 tablespoon cacao nibs
2 tablespoons dried blueberries, chopped (try my homemade dried blueberries here)
2 tablespoons almonds, chopped
Directions:
1. Put cupcake liners in a 12-cup cupcake pan.
2. In a double boiler, add cacao powder, cacao butter, coconut oil and honey. Melt and stir until thoroughly combined. Remove from heat.
3. Mix in cacao nibs, dried blueberries and almonds.
4. Add about 1 tablespoon of the mixture to each cupcake mould. Put chocolates in freezer for about 1 hour or until chocolate mixture hardens.
